Frankly, this is not a question that should be answered on Yahoo!. I say this because no matter how I justify my answer, a solution will not be resolved.
The question “How do you keep customers coming to your golf course in winter – looking at loosing a lot of business once winter sets in,” should be in a clear concise budget. Who would put a restaurant in at a golf course if they knew the traffic flow in winter months? Of course you are going to lose money, but with a budget, YOU know beforehand revenue will fall during cold months.
Nobody from a business standpoint would log onto Yahoo! Answers to find help in their failing restaurant. Beside that, your stature is not high enough to make a business decision anyways. I’m only stating the obvious that many can’t argue.
If you have a successful restaurant which has excellent food and service, get a roster of the membership, mail them some incentive coupon like one meal for half price, a free appetizer and tell them you appreciated their business during the golf season and look forward to serving them this winter.
